It has been a while since I've seen workers removing coconut flesh from the shells. The thick white coconut flesh are put in the plastic trays and the shells thrown into the bamboo baskets. The flesh which are from matured nuts will most probably be sent to a factory where oil will be extracted from them. Fresh coconut oil can be very aromatic. There was a time when most curries were cooked with coconut oil.
